I’ve posted about this sausage soup a few times on Instagram and always get messages asking for the recipe so I’d say it’s probably about time to put it on the blog!!! This soup is seriously delicious. It’s so hearty and flavourful. I don’t know where it originally came from, my mom always used to make it - we called it “Sunday soup” because she’d make it and just let it simmer on a Sunday afternoon and we could help ourselves (seriouslyyyyy so cozy and delicious). It has quickly become a favourite in my household as well - so here it is!
8-12 cups water
1 can diced tomatoes
4 cubes beef bouillon
1 or 2 zucchini
1 spanish onion
1-2 cups broad egg noodles
1 pkg mild Italian sausage
1 tbsp butter
parmesan cheese (optional)
Fill a big soup pot with about 8-12 cups of water (depending on how big your soup pot is or how much you want to make)
Add diced tomatoes & beef bouillon cubes
Begin to simmer on low heat
Dice onion and add to pot.
Remove ends of zucchini, and dice into halved slices; add to pot
Add basil & oregano (sorry guys, I don’t really measure when I cook - maybe 1 tbsp basil and 2 tbsp oregano?)
Let simmer on low-medium heat, stirring occasionally
Add whole sausages (allow to cook awhile first, they cut into slices easier!) - ideally, mild Italian sausage but this is what I had on hand and it tastes very good as well!
Let simmer again, ideally for 1-2 hours
Remove sausages, cut into slices, and put back into pot.
Continue to simmer until about 20 mins before serving, add egg noodles and butter
Sprinkle with parmesan cheese and serve with fresh bread! Voila!
