FAVOURITE RECIPES FOR LEFTOVERS

Well guys, we did it! Christmas 2018 is officially in the books. I hope you enjoyed wonderful days of family, friends, drinks and good food- and that Santa was good to you, of course! In the following days after Christmas, I can pretty much be sure that I’m going to have a lot of two things - toys sprawled all over the kitchen, living room, dining room and basement - and leftovers! I loooove leftovers. They’re great on their own and can also be really quick and easy to add to another recipe to enjoy after.

I love putting leftover turkey onto a sandwich or into wraps, and I’ve mentioned before that we’re a big soup loving family so those recipes are also pretty popular. I also found the recipes below in the past and love them both - they’re both easy and delicious! So if you have leftover ham (what????) or turkey, you can give them a try!

FOR LEFTOVER HAM:

HAM & BEAN SOUP

INGREDIENTS

8 cups chicken or vegetable stock

leftover ham, diced

white beans (or beans of your choice)

celery, chopped

carrots, chopped

large onion, chopped

minced garlic (about 3 cloves)

2 tsp thyme

1 tbsp parsley

1/2 tsp ground pepper


DIRECTIONS

In large soup pot, add chicken or vegetable stock & begin to simmer on low

Sauté onion, carrots, celery and minced garlic in a bit of oil until tender, and then add to pot

Add leftover ham into pot.

Rinse beans very well, and then add to pot along with thyme, parsley and pepper.

Bring to a boil and then let simmer for a few hours.



FOR LEFTOVER TURKEY & STUFFING:

CHEESY TURKEY, BROCCOLI & STUFFING CASSEROLE

INGREDIENTS

1 can cream of chicken soup

8 oz sour cream

leftover cooked turkey, diced (can also substitute rotisserie chicken)

leftover stuffing, or 1 box stuffing mix

2 cups frozen or fresh broccoli

shredded cheese

DIRECTIONS


Preheat oven to 350°F 

Mix chicken soup, sour cream, & turkey

Spray casserole dish with cooking spray & place turkey mixture layer in dish

Microwave frozen broccoli or boil fresh broccoli for a couple minutes, drain & spread on top of turkey mixture

Cover broccoli with stuffing

Bake for 15-20 mins

Remove from oven, add cheese and bake for another 2-5 minutes or until cheese is melted
