EASY 20 MINUTE DINNER - TORTELLINI BAKE

So the sick saga in this household continues. I took the kids to the doctor this morning and it turns out, everyyyybody has pneumonia. At first I thought- ugh, great. We’ve all been sick for so long - but you know what? It is what it is, and now we’re all on antibiotics and we’ll be on our way to being better in the next few days.

There is absolutely nothing fun about having sick babies. Especially when you’re a mom who is sick yourself. All of my current household duties are falling behind (despite my sweet husband doing the best he can to help out) and I have a huge pile on my desk that I can’t even think about right now. Just trying to get everyone back healthy and take care of the basics. With that being said, I’m currently depending on quick and easy dinners because right now the last thing I have energy by the end of the day is cooking a big dinner. I was inspired by a recipe I found on Pinterest (via thisgalcooks.com) and love this easy and hearty recipe for something quick to throw together!

INGREDIENTS

-tortellini (around 3 cups)

-spaghetti sauce (see below for an easy spaghetti sauce recipe) - can also substitute with regular tomato sauce

-shredded cheese, 1 1/2 cups

-parmesan cheese, 2 tbsp

-parsley, to garnish

Easy Spaghetti Sauce

-brown 1 lb of ground beef

-1 can diced tomatoes

-1 jar Ragu or tomato sauce of choice

-Oregano (as desired, around 2-3 tbsp)

-Garlic plus (as desired, around 2-3 tbsp)

-Basil (as desired, around 1 tsp)

-salt and pepper, to taste

DIRECTIONS

Cook the tortellini as per package instructions

Toss cooked tortellini with spaghetti sauce

Add parmesan cheese & stir

Top with shredded cheese

Bake at 350 degrees for 10 mins

Last 2 minutes, set oven to broiler so cheese turns a little brown

Garnish with parsley
